What You’ll Need:
- 4 slices Rustic Sourdough Bread
- 1 tablespoon fresh sage, chopped
- 6 tablespoons unsalted butter, divided
- 1 honeycrisp apple, thinly sliced
- 2 large yellow onions, sliced ½ inch thick
- 8 oz cheddar cheese, grated
- 2 oz brie cheese, sliced into slivers
- 2 teaspoons kosher salt
- 1 tablespoon olive oil
Directions:
- Caramelize the Onions: Start by melting 2 tablespoons butter in a skillet on medium heat. Add the onions and stir every few minutes. After 10 minutes, add 1 teaspoon of kosher salt. Keep cooking for another 30-40 minutes until golden and sweet. Add a splash of water if the pan gets too dry.
- Make Sage Butter: Mix the chopped sage with 4 tablespoons of softened butter and 1 teaspoon of kosher salt.
- Assemble the Sandwiches: On one slice of bread, layer brie, cheddar, thin apple slices, ¼ cup caramelized onions, more cheddar, and then top it off with another slice of bread. Spread 1 tablespoon of sage butter on the top slice.
- Grill It Up: Heat a skillet on medium with olive oil. Place your sandwich buttered-side down in the skillet and spread the remaining sage butter on the top. Cook for about 6 minutes on each side, until golden and crispy.
